Fried Cauliflower


4 medium sized florets of cauliflower blanched in hot water with salt and turmeric

Oil, for deep frying

For the filling:

Processed cheese, 1/2 cup grated

Raisins 10-15

Fresh pomegranate 2-3 tbsp.

Cashews  chopped 2-3 tbsp.

Chopped coriander leaves, a handful

Ginger, finely chopped 2 tbsp.

Khoya, crumbled 4 tbsp.

For the batter:

Besan 350 gm

Ajwain 1 tbsp.

Garlic 2 tbsp.

Salt, to taste

Red chilli powder

Water, to make the batter


In a pan of hot water add salt, turmeric and cauliflower. Blanch till its softened a little.

For the batter:

Mix all the ingredients together. Add in enough water to make a semi-thick batter.

For the filling:

In a bowl add the all filling ingredients and mix with your hands to make a soft, gooey mixture.2.Stuff the blanched cauliflower with this mixture in all the crevices.3.Coat the stuffed cauliflower in the batter and deep fry till golden.
