Vegetable Pakora

Ingredients:

Eggplant (julienne) 2
Carrot (julienne) 1
Onions (julienne) 2
Bell pepper (julienne) 1
Potato (julienne) 2
Kasoori methi 1 tbsp
Paneer (julienne) 1/4 cup
Spinach (chopped) 1 bunch
Chickpea flour 1 cup
Spring onion (chopped) 1/2 cup
Coriander leaves (chopped) 1 bunch
Coriander seeds 1 tbsp
Fennel seeds 1/4 tbsp
Carom seeds (ajwain) 1 tsp
Chili powder 1 tbsp
Oil to fry
Salt to taste
Green chilies (slitted) 2

Method:

Take some coriander seeds, fennel seeds; make a coarse powder of this two.
Take a bowl add this powder with ajwain, chickpea flour, salt, oil and mix them till it is of a sandy texture.
Now add kasuri methi, potato juliennes, chopped bell pepper, julienne of carrot, eggplant, spinach, green chillies, spring onions, paneer, onions, chopped coriander leaves, chilli powder, mix it properly and let it rest for 5 minutes. Sprinkle some water and make it into dough.
Heat oil in a pan for deep-fries. Put small dumplings in oil and fry till the colour turns golden.
